In response to your questions about when we learned about Kuruk sparing Koh’s life… I believe it was explained in the flashback on the Lion Turtle in ATLA: Sozin’s Comet Pt.2 The Old Masters when Aang is seeking guidance on taking Fire Lord Ozai’s life from his past lives.
it’s also on the Wiki… ::”When Ummi and Avatar Kuruk were getting married, Koh lured Ummi to the Spirit World, where he stole her face and trapped her forever as punishment for Kuruk’s arrogant ways.[4] Kuruk was determined to end Koh’s life, but when the two met, the past Avatar could not go through with it as he realized that bringing an end to the spirit would also destroy the love of his life.[5] …”

We covered Welcome To Republic City the game heavily on the podcast and for the life of me I just do not remember that being on the game initially.
At least it was mentioned somewhere, it definitely was not said in the show.
